Alfalfa (Medicago sativa) is a perennial flowering plant. While native to warmer climates, it is found world-wide and is both cultivated and foraged for use as a nutrient rich medicinal tea and livestock supplement food. It has clusters of small purple flowers. Alfalfa is considered a tonic herb, not specific to any one ailment so much as good to support the whole body system. The leaves are used to make infusions and the seeds are often sprouted and eaten on sandwiches and in salads.
Directions: To make alfalfa tea, pour 1 cup of boiling water over 1 teaspoon of herb. Cover and let steep 3 to 5 minutes. In a tea, alfalfa has a soft, delicate, hay-like flavor. It melds very nicely with stronger herbs and especially complements the flavors of mint and lemon.Add 1 teaspoon of alfalfa leaf powder as a dietary supplement in blended drinks.
