Chicory (Chichorium intybus)is in the dandelion family Asteraceae. Its stem is hairy, its leaves are stalked, and its flowers are typically bright blue. The roots of chicory are ground up and roasted to make a coffee substitute. The granules can also be used as an additive to coffee to add a bitter taste. During the Great Depression, it was widely used in homes in the United States to stretch a supply of coffee.
Dissolve two tablespoons of ground chicory coffee substitute in a cup of hot water or add a smaller amount of chicory to your coffee.
Warning: Do not eat chicory in large amounts during pregnancy. It may start menstruation and cause a miscarriage. Not enough is known about chicory’s effect on breastfeeding. If you have an allergy to ragweed and related plants, chicory may cause an allergic reaction. Do not use chicory without medical supervision if you have gallstones.
